Roasted Beets With Greens
1 bunch beets with greens 1/4 cup olive oil divided 2 cloves garlic minced salt and pepper to taste 1 tbsp red wine vinegar Preheat oven to 350 degrees. Wash the beets leaving skins on and remove the greens. Rinse greens, removing any large stems, and set aside. Place the beets in a small baking dish and toss with 2 tablespoons olive oil. Cover and bake for 45-60 minutes, or until a knife can slide easily through the largest beet. When the roasted beets are almost done, heat the remaining 2 tablespoons olive oil in a skillet over medium-low heat. Add the garlic and cook for a minute. Tear the beet greens into 2 inch pieces and add them to the skillet. Cook and stir until greens are wilted and tender. Season with salt and pepper. Slice the beets and place on top of the greens to serve. Creamed Cabbage 4 slices bacon 1/4 cup butter 1 tablespoon all-purpose flour 1 teaspoon salt 1 large head cabbage, cored and shredded 1/2 cup sour cream Place the bacon in a deep skillet and cook over medium-heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon to cool. Whisk the butter, flour, and salt into the drippings in the same pan. Stir in the cabbage and cook, stirring occasionally, over medium heat until cabbage is tender, about 15 minutes. Crumble the bacon, stir the bacon pieces and sour cream into the cabbage mixture. Tomato, Basil, and Feta Salad 6 Roma tomatoes diced 1 small cucumber peeled, quartered lengthwise, and chopped 3 green onions, chopped 1/4 cup fresh basil leaves, cut into thin strips 3 tbsp olive oil 2 tbsp balsamic vinegar 3 tbsp crumbled feta salt and pepper to taste Toss the tomatoes, cucumber, green onions, basil, olive oil, balsamic vinegar and feta cheese in a large bowl. Season with salt and pepper. Waldorf Cabbage Salad 1/4 head savoy cabbage, thinly sliced 4 apples, cored and diced with peel 1/2 cup finely chopped walnuts 6 stalks celery diced 1/3 cup mayonnaise 1 tablespoon white sugar 1/2 teaspoon salt Slice cabbage into think pieces 1 to 2 inches long. Do not use the large ribs of the cabbage as they are too strongly flavored. In a large bowl toss the cabbage, apples, walnuts, celery, mayonnaise, sugar and salt until evenly coated. Serve immediately or store in the refrigerator for up to one day. |

The recipes below are for a juicer. If you want to use a blender you would probably need to add liquid- like water or almond milk or something else to the blender. If you are using a juicer it is generally suggested that you never add liquid and never juice items such as avocados and bananas. Be sure to read the instructions that come with your model. Generally it works well to alternate dark leafy greens or denser vegetables with cucumbers, celery or fruits so that your juicer will run smoothly. Experimentation is a great way to figure out what you like when it comes to juicing- so use these recipes as a guide or make up your own!
